They would be in one word: hypocrite. Adopting an animal is making a commitment to care for it, that includes keeping it alive. Not only would you be deceiving everyone, you would have to kill that animal you promised to care for.
Hmm, good question. My first reaction is shock and a little horror. But then, assuming it's killed humanely, is it really any different than buying rabbit meat at the butcher? Why is one rabbit more deserving of life than another?
I don't know if anyone would do that though. There are adoption fees, and I'm pretty sure they run more than the cost of the meat at a store.

not a bad idea rabbit is good. it's hard to hunt them in the wild
